My favorite layover: Guanajuato City, Mexico
Just a little over an hour away from the more known San Miguel de Allende is Guanajuato, a vibrant and bustling Mexican city. Walk to the top of the Pipila to get an amazing of all of the many colored houses that jut out of the hills. Visit the birthplace of Diego Rivera, and afterwards grab the world's best margarita at Clave Azul. If you're lucky, somewhere along the way you will pass by the Tlacoyo lady cooking up some alleyway deliciousness ( tlyacoyos are grilled masa cakes filled stuffed with a variety of meats, veggies, salsas, and cheeses)
